
I am Justina, the recipe developer and writer of Flaevor. Growing up I was lucky to have a varied choice of cuisine to eat. From traditional German and Polish food, fragrant Thai spices, Turkish and Japanese. Classic Australian BBQ’s combined with Indian curry, Lebanese mezze plates, Vietnamese noodles and mostly everything else in between.
At 21 I got my first hospitality job at a Spanish tapas restaurant. That was followed by some years in Berlin working in an American burger kitchen. The next decade I spent living and working in London, visiting every multicultural supermarket and restaurant that I could. This is where my obsession with spice and flavour developed.
I completed my professional chef training in London learning classic French techniques. During this time I desperately missed the kick of spice, chilli and umami I’d grown to love. Developing new fusion flavours using became an obsession. Now I focus mainly on the use of spice, marinades, sauces and heat from chilli as the base of all my recipes.
Other Influences In My Cooking Style
I love fusion flavours. When I arrive in a new country for holiday, I immediately visit the local supermarkets and search for interesting ingredients. It is a great way to learn new international flavour combinations and develop exciting recipes.
One of my biggest influences is from eating out in restaurants. I celebrate all Chefs and their hard work, inventing new plates of food and the hours of hard work that goes into the job.
I am quite possibly addicted to cookbooks.
